Chinese people take offense at foreigners (barbarians) criticizing the food they prepare for you in China. In 1972 I was on R&R in Hong Kong and had lunch at one of the most expensive restaurants there and had a table on the veranda overlooking a calm and blue cove. I ordered the most expensive thing on the menu, Steak Tartare, expecting a well done T-Bone or Ribeye steak. A huge tray was brought out with twenty or thirty spices in little bowls on it with a wad of raw ground beef steak. I said put all of the spices in it and the servers mixed up the spices in the raw gound beef and put it on a plate in front of me beaming proudly on what a good job they did. I said when are you going to cook it? A huge and serious uproar occured after I refused to eat it unless it was cooked. Finally a wok was brought out and they made a mess of it when cooking. I refused to eat the mess unless I had a bottle of ketchup to kill the taste. More uproar and all of the waiters and chefs were pissed off at me and they were going to call the police should I decide not to pay. I paid for and ate my disgusting lunch and gave good tips to all of the employees surrounding my table. After I gave good tips they were all smiling and I left smiling in haste vowing never to return.

 

Did you ask them to heat up your vichyssoise as well?

Perhaps you should know what you are doing before you patronize anymore fine dining establishments.
