    I was more concerned with the acidity and if that would change the jam
    texture using fresh pineapple versus canned pineapple.

    Yeah, of course. However, upon reviewing my "act" recently, I noticed
    that the majority of my jokes were along the lines of: "Ever notice how
    white people do (x)?" So, I just decided to scrap the whole "plan."

    Fresh is froot always better. Don't fret the acidity. Don't
    overcook - put it in the freezer so it can't grow. Any kind of froot
    works though dried is preferable to canned (tin tastes funny). Don't
    cook it too much and plan on freezing. Just make sure there's enough
    pectin so it doesn't leak through and drip all over yer shirt. This is
    important if you make yer own sourdough bread fresh with big holes
    innit. I had a nice white shirt with purple spots from making powerful
    but delicious beach plum jam - I had to soak it in hydrogen peroxide
    for about 3 hours.
